Mini Taco Salad Appetizers




Welcome to the Blog today. I'm going to share with you this great recipe for Mini Taco Appetizers. You can make small ones to serve with pre-dinner drinks or with other hors d'oeuvres if your entertaining a large group. They are tasty, colorful and....who doesn't like Tacos?


Mini Taco Salad

Ingredients


2 tablespoons butter, melted

1/8 teaspoon garlic powder

2 and 1/4 teaspoons ground cumin, divided

12 6-inch flour tortillas

1/4 cup prepared or commercial salsa

1/4 cup sour cream

1 tablespoon chopped fresh cilantro

1 pound ground beef

1/4 cup water

2 teaspoons Chile powder

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/4 teaspoon ground red pepper

1 cup finely shredded lettuce

1/2 cup seeded and chopped tomato

1 ripe avocado, diced

1/4 cup finely shredded cheddar cheese

Directions

Preheat oven to 325 degrees F.

In a small bowl, combine melted butter, garlic powder and 1/4 teaspoon cumin, set aside.




Using the 6-inch flour tortillas, brush both sides with butter mixture. Place tortillas in muffin tin allowing space for adding meat later.




Bake for 18 to 20 minutes until lightly browned and crisp. Cool in pan for 10 minutes. Remove to wire rack .

In a small bowl, combine salsa, sour cream, and cilantro. Cover and refrigerate.


In another small bowl, make the seasoning mixture by combining chili powder, remaining 2 tsp cumin, garlic powder, paprika, salt, pepper, and ground red pepper. Stir to combine well.








In a medium skillet over medium-high heat, cook ground beef util browned and crumbly, around 6 minutes. Drain meat completely.


Return to heat and add seasoning mixture, stirring to combine well.




Spoon meat into tortilla cups. Top with lettuce, tomato, salsa mixture, avocado and cheese. Serve immediately.




Toppings can be anything you enjoy with tacos.




I think you will like this fun recipe. You can use it to make a lunch or dinner as well as the Mini Tacos, just use larger tortillas and a larger mold. Both are widely available. Add a Margarita or lemonade and you are ready to go. It's nice to prepare your own seasoning for the tacos. You can make enough to keep for a second meal and just store it in an airtight container.
