This is an easy Salmon, vegetables, and rice dish made with a little olive oil, lemon, herbs and wine.

The salmon is broiled in the oven. Rub olive oil and your favorite herbs on the salmon and broil for 8 – 10 minutes per side. It needs to come to an internal temperature of about 160 degrees.

I used red onion cut into chunks, red pepper, grape tomatoes, and pea pods. I tossed the vegetables in olive oil and a variety of herbs such as lemon verbena, parsley, and lemon thyme.

Add them to a medium high heated skillet and sauté until softened. You want to keep them al dente. When they are almost done add a dollop of white wine to the pan and finish cooking the vegetables.

While vegetables and salmon are cooking …. cook the rice. Add a little vegetable oil to your rice pan and heat. Add your rice and stir being sure to coat each kernel with the oil. Add your water and some curry powder and let cook until done.

To assemble add the rice to the vegetable pan and combine. Serve on plates and place a serving of salmon on top of the vegetables and rice.

Really delicious, takes little time and very fresh for a summer dish.
