Almost No Stir Risotto Recipe with Peas



Welcome to the blog today. We're going to be preparing a great Risotto recipe from Italian Food Forever with a few modifications and additions. This is a really tasty dish great for dinner parties or for a quick....I know Risotto.....weekday meal. You can alter the vegetables to suit your taste and to give you some variety. Best.....you don't have to stand at the stove and constantly stir this Risotto.



The Almost No Stir Method for Risotto

(From Italian Food Forever)

5 and 1/2 cups chicken broth

2 tablespoons butter

1 tablespoon olive oil

1 medium onion, peeled and finely diced

2 cups Arborio Rice or Carnaroli Rice

1 cup dry white wine

To Finish

1 cup grated parmesan cheese

1 teaspoon lemon juice

Salt and pepper

2 tablespoons butter

1 package green peas, defrosted and cooked for 1 minute in microwave

1 egg yolk per person




Heat the broth in a pot to simmer and keep warm.






In a heavy cast iron pan, heat the butter and oil and cook the onion over medium heat until translucent (about 5 minutes).

Add the rice and stir to coat well.




Add the wine and cook over medium heat until the wine is almost absorbed. Stir to keep from scorching.




Reduce the heat to medium low and add 5 cups of the hot liquid.

Cook for about 16 to 18 minutes, stirring twice during this period or until the rice is just al dente (Stir at 6 minutes and at 12 minutes)

Add remaining 1/2 cup of broth and stir constantly for 3 minutes until the rice is creamy, add additional water if rice is not loose enough.

To Finish:


Stir in grated parmesan cheese, lemon juice, salt and pepper to taste, butter and partially cooked peas. (They will finish cooking in the risotto.)






Spoon risotto into individual serving bowls.




Add 1 egg yolk to each bowl and stir in. This is what restaurants do right before your plate is served. It adds a golden color and an added layer of richness to the risotto. (The egg is not in the original recipe but a trip from a chef friend of my daughters.)


Note: You can add other green vegetables to the rice instead of the peas. (Asparagus, Broccoli, etc.)


Give this one a try. It takes about 30 - 40 minutes to prepare from scratch so not a lot of time, if you are in a hurry to get dinner on the table or spend time with guests.
